2023 Chambourcin
Chambourcin is aged in Hungarian and French oak. This wine pairs well with red meat and heavier pastas with red sauces.
2021 Petit Verdot
The small berries with thicker skin held up and we were able to make a very nice table wine. The tannins are lighter than the 2019 Petit Verdot, but the aromatics and dark fruit flavors come through very well.

2021 Cabernet Sauvignon
We don’t make Cabernet Sauvignon annually. It is weather dependent, with low rainfall preferred, as it is a late ripening grape.
This Cabernet Sauvignon will age for a long time with marked improvement in taste at five or six years.
When young, red wine like this has suspended long chain tannins. Over time those break down and release fruit flavors and soften the wine. This is a benefit of aging.
This wine is fruit forward and smooth with a smokey finish.

2022 Fossil Hill Reserve
Blend of 60% Cabernet Franc, 20% Petit Verdot, 20% Cabernet Sauvignon. Aged separately and blended before bottling. The three wines were aged in a combination of French and Hungarian Oak. Notes of spice, black olives, and dark fruits.
